GOAT TOMETomme de Chevre is made in the mountainous regions of Savoie up to the Provencal Alps, as well as on Corsica. It is a semi-soft cheese made from goat's milk. There are several varieties of the cheese according to surface, that could be bare or covered with a whitish or bluish mold or with red flora. The cheese has a slightly salty tang and the subtle background flavour of tarragon and white wine that is characteristic of goat's milk cheese.
White wine: Jurançon (Sud Ouest). Sauterne (sweet wine) Red wine: Madiran (Sud Ouest), Menetou-Salon (Val de Loire, Centre)
