comteComté (AOC)

One of France's great cheese, this is a cooked, pressed cheese with a tough rind, ranging in colour from yellow to brown, and with a deep golden paste scattered with round holes varying from the size of a pea to a marble.

The reason for this enormous size is in part due to its long tradition. In earlier times, large cheese wheels had the advantage that they could be stored for long periods of time, keeping throughout the long winter.

Serve it either at the end of the meal or use it in canapés, fondues, gratins and soufflés. It is also really good during aperitif with some French nut saucisson.
