bleu caussesBleu des Causses (AOC)

A strong-smelling French semi-soft blue cheese and a thinrinded cheese (sold foil-wrapped) with a pale creamy paste, evenly spread with dark blue veining.

A close cousin to Roquefort, the Bleu des Causses is matured for 3 to 6 weeks in the natural caves of the gorges du Tarn. Cool, damp air passes through the caves carrying the mould spores which encourage the development of the blue.

Bleu des Causses is excellent on the cheeseboard. It also makes fabulous sauces.

Bleu des Causses goes well with a sweet white wine, especially at the end of a meal.
