beaufortBeaufort (AOC)

A large round, hard yellowish rind mountain cheese produced in the Savoie province in the French Alps. Beaufort was already known in the time of the Romans and is named after a small rural town in the French Alps. Beaufort cheeses come in three versions, Beaufort, Beaufort d’été (summer Beaufort) and Beaufort d’Alpage (in the Alps mountains).With seasonally-produced Beaufort the interior ranges in colour from white in the winter cheese to pale yellow in the summer one. The milk used in one variety comes from the Tarentaise or Abondance cows that graze in the Alps.

Eaten as a table cheese.
